Vintage & Viticulture
We experienced a relatively mild and dry winter and early spring. Bud break was about 2 weeks earlier and May brought in summer like weather. The rest of the season remained warm and allowed grapes to reach ripeness not seen in a couple of years.
Winemaker's Notes:
The juice was pressed from clean, ripe fruit and select yeast, for a warm, slow fermentation, was introduced to initiate a 10 day fermentation. 70 percent of the wine was only in stainless steel tanks while 30 percent of the blend was aged in older oak barriques. Older oak barriques allow for a gentle micro-oxidation that softens the acidity in the wine and adds complexity.
Tasting Notes:
A fresh fruit styled Chardonnay with a gold tinge. Aromas of tree fruit with a slight vanilla note. The palate displays a creamy smooth texture with flavours of McIntosh apple, Bartlet pear and vanilla spice. Tasted March 9, 2012

Grilled shrimp with garlic butter, smoked salmon and fowl roasts. Pasta primavera in a light Alfredo sauce, crab cakes, artichoke dip and chicken cordon bleu.
