Vintage & Viticulture
We experienced a relatively mild and dry winter and early spring. Bud break was about 2 weeks earlier and May brought in summer like weather. The rest of the season remained warm and allowed grapes to reach ripeness not seen in a couple of years.
Winemaker's Notes:
Fruit came in clean and ripe and it was pressed immediately. Juice was clarified using flotation technology and a selected yeast strain was used. For our Steel Chardonnay a cold ferment is used to maintain a crisp acidity and fruitiness. Fermentation was completed in 10 days and no malolactic fermentation was done on this wine.
Tasting Notes:
A fresh nose of apples and pineapple. On the palate, flavours are confirmed of apple and a touch of pineapple with lemon/orange citrus zest. A creamy mouth feel finishing on a refreshing acid and fruit. Tasted March 9, 2012.

Roast chicken, scallop and shrimp dishes, pasta primavera and creamy, mild cheeses.
