We experienced a relatively mild, dry winter and this led to an early spring. Bud break was about 2 weeks earlier and May brought in summer like weather. The rest of the season remained warm and allowed grapes to reach ripeness not seen in a couple of years.
Winemaker's Notes:
Upon arriving the fruit was crushed and given 24 hours of skin contact and then lightly pressed. Juice was clarified using flotation technology and a selected yeast strain was added. Fermentation was complete in 10 days.
Tasting Notes:
This light copper tinged wine displays lemon-pear and lime aromas with mineral notes on the nose. On the palate, a soft silky mouth feel. Green apples, melon, lime flavours and minerality fill the mouth. It finishes with white grapefruit and a refreshing acidity.
Food Pairings:
This versatile food-friendly wine pairs with a multitude of dishes; including Asian and Indian cuisine. Seafood dishes and white-meat entrees compliment this wine perfectly.
