This fruit was hand-harvested from our Cabernet Sauvignon vineyard block planted 1989 and thinned to a restricted 2 tonnes per acre. Clean ripe fruit was hand harvested and delivered to the winery minutes after harvesting.

WINEMAKER’S NOTES

The grapes were gentle crushed and destemmed. A selected yeast culture was added to begin the fermentation quickly. After fermentation was complete the wine moved into new French and new Hungarian Oak barrels where the wine completed malolactic and aged for 30 months.

TASTING NOTES

A big, bold wine with a deep ruby colour. The aromas are rich and complex with hints of black cherry, cassis, leather and dark chocolate. The palate has a richness that lingers well after the last sip. Pair with red meats like leg of lamb, rare steaks and venison. Mature, hard cheeses as well as dark chocolate complement this wine brilliantly.
